Seems like I've been doing that for months! But I am about to get it. Yes, amazing what you find in the dark corners. Can you beat 14 cans of family size chicken noodle soup, all campbells and not too outdated! This man. I must say, he is getting better. And his compromising skills are really getting finely tuned:)

I made shrimp tacos tonight for supper. very good and very easy, and clean eating too! Throwing some ideas out there. Need some ideas, my self!
Not exercising much yet. Cold. I want to get into it, just not there. Come on Mist, lets encourage each other. All of us. Nice job on the basketball this weekend, Mist. Keep it up! Every bit helps.

Cleaning the pantry!!!
Happy Sunday!!!
I decided to clean my pantry today and amazingly enough 3/4 of the items were expired!! So now my pantry is cleaned out. Amazing. How things get buried.
Well as far as my new year resolutions I haven't achieved much but it is still the start of the year. How is everyone else doing?

What happened to the rest of us?
So... I am back to teaching. English this time. But so far, I am loving it!!!! Only for the semester, and not official yet. They have to advertise the job for 2 weeks, and I had to apply. But I am a very good candidate;)
Misty~We all need to eat better, don't we? And exercise. It is finding the time and motivation. As we find some good, healthy recipes, lets post.
Craig does not like many vegetables, so I am feeling quite limited. I have been cooking a lot of bell peppers, tomatoes, and onions. Which, I researched, are reallygood for you! One idea:
Shrimp, veggies and rice
Start your rice. I use brown rice, so it takes longer. And I use chicken broth instead of water. More flavor. You could also use whole wheat pasta or queinna pasta(not sure how to spell that) or just quinea. It cooks the same as rice.
Cut up and stir fry your veggies. I use peppers, onions, and tomatoes. (Kinda of boring, but good)
Throw some chopped garlic in. Use olive oil.
Then add your shrimp. You can buy the precooked or frozen fresh. Make sure they are deviened. And if they have tails, I remove them. Shrimp are done, when they turn pink.
Serve over rice or pasta. Done! And pretty good. And healthy.
Next time I make it, I'll post a picture.
So, we went from two weeks of 24/7 seeing each other, Craig and I. Got a little tense at times, but we survived it. Now we are back down to a few hours a night. From one extreme to the other. Just enjoy, right?

Drs and Genes
Good morning,
I took Katie to see the a pediatric endocrinologist and of course she disapproves of how we eat. With Katie's gene pool I really have to start making some changes. I am going to try to find a coking class we might be able to take together on the weekends. But in short we have to start excersing and eating better. And I have to get my shit together and be a good Mom and role model.
Wish me luck and I will need it!!!

Got up early and made homemade cinnamon rolls. Clean eating?, you ask. Good question. Well, I used bisquick, but I'm going to buy whole wheat pastry flour today. I used brown sugar, need to use coconut sugar. ( looking for that today as well. Thought I had some. God only knows where it might be) Cinnamon, green apple, blueberries, and real butter. So, almost clean eating. They were delicious. Small, so I had 1and 1/2.
Somethings I am shopping for today and start using:
whole wheat pastry flour
Organic Milk, whole milk (expensive, but sooooo delicious, they suggest whole instead of 2%)
Honey
almonds
avocado
Salmon
Think I'll try some frozen vegetables.
Too damn cold to get out and walk. Think about Daily Burn. Any one tried that?
Feeling positive and healthy today. Here we go!
